Assistant Manager Wine, Beverage and Dry Store Supplies

Purpose:

  • To provide quality beverages (wines, spirits, coffee/tea and soft drinks), dry store and catering supplies for inflight and lounges in a cost-effective and timely manner in alignment with market trends and the catering proposition defined by our Customer Experience – Food and Beverage team
  • Formulate strategy, standards, policies and procedures in the provisioning of direct purchase F&B items* for Cathay Pacific (CX) and Cathay Dragon (KA) flights and our worldwide owned lounges
  • Collaborate with our Procurement teams to achieve cost-effective beverage, dry store and other catering supplies, and ensure the new products or services delivered to the market in a timely manner
  • Work and coordinate with the Galley Loading Planning, Equipment Planning and Development, Catering Inflight and Lounge and Inflight Customer Service Delivery teams to ensure the provision and loading ratio meets the requirements of our inflight services and the needs of passengers
  • Work with Maritime & Mercantile International (MMI) to strengthen and promote the image of CX’s inflight wine programme, organizing promotional activities both internally and externally
  • Manage our relationship with MMI and work closely with them to ensure the services provided are up to standard
  • Communicate product changes, including wine selections and procedural changes, to all relevant internal parties and caterers when necessary

Key Responsibilities:

  • Assist Catering Inflight Lounge Manager (CILM) to manage the sourcing, development, cost, specification, procurement, supply chain and changes of airline direct purchase dry store and F&B items*
  • Be accountable for the budget and cost of related airline direct purchase dry store, F&B* and wine items to achieve satisfactory results for the company
  • Formulate strategy, policies, procedures and standards in the provisioning of airline direct purchase dry store and F&B items*
  • Plan and manage wine and beverage promotions, including internal and external communications, public relations and Marco Polo Club events and activities. Run the Air Sommelier programme for cabin crew as well as training videos and wine brochure production
  • Work with MMI, leading and managing the wine and spirits programme for CX and KA including budgeting, planning, tasting and selection
  • Work with our Retail Products Manager for Home Delivery Programme listing
  • Provide advice to the Customer Experience – Food and Beverage team on wine, beverage and dry store-related matters in our owned lounges as required. Provide inputs for wine menus and promotional inserts
  • Determine and allocate wine, beverages, dry store and airline direct purchase F&B items* loading ratios, routes and classes for CX and KA flights. Ensure the provision of dry store and airline direct purchased F&B items* meets inflight demand while optimising catering operations efficiency
  • Monitor the forecast consumption trend for dry store and direct purchase F&B items*, working with the Galley Loading Planning and Equipment Planning and Development teams to ensure that standards are set and met, making ratio adjustments as necessary
  • Plan and manage the product development of festive items – e.g. giveaways for of Chinese New Year and Christmas - with the Procurement teams. Work with Customer Experience - Entertainment Platforms and the Connectivity and Ancillaries teams on product promotions and media sales opportunities (eg.mooncake sponsorship) and prepare the necessary MOU agreements
  • Work closely with the Purchasing teams on tender and contract renewals, and the selection process, price, purchasing terms and evaluation of related dry store and F&B items*
  • Work closely with Customer Experience – Food and Beverage team in developing the agreed service standards for beverage, dry store and F&B items*
  • Work with the Brand team to ensure the packaging design and colour scheme of CX and KA owned F&B products fit the airlines’ brand requirements
  • Work with menu planners and culinary design chefs on food/wine pairing initiatives and other projects as required
  • Manage the relationships with MMI, wine consultants, dry store and F&B items* suppliers
  • Review customer satisfaction for wine and F&B items* and take the appropriate corrective action
  • Review and answer internal and external comments and suggestions. Issue notices to relevant parties and update manuals when required
    * Direct purchased dry store and food & beverage items here refer to items not to be further processed by caterers.

Requirements:

  • Tertiary education in food and beverage, hotel and catering management or related disciplines
  • Certified with WSET Level 3 or other well-recognized qualifications in wine education
  • A minimum of 5 years’ relevant experience in the airline industry or a hospitality background
  • Good knowledge of and exposure in the wine, beverage and dry goods supplies industry
  • Solid experience and knowledge in airline business processes and procedures
  • Good interpersonal and communication skills with the ability to interact with people at all levels
  • Strong command of written and spoken English
  • Good analytical skills
  • Computer literacy e.g. Excel, PowerPoint, Word
  • Relevant skills in procurement and negotiation, public relations, cost budget management and basic financial skills
