Reports to: Chief Executive Officer of Cathay Pacific Catering Services
Purpose:

  • Lead the Culinary Excellence team while working closely with the Customer Experience Design team to deliver the in-flight catering proposition (including F&B, wine, beverages, dry stores and catering equipment) for the entire networks of Cathay Pacific (CX) and Cathay Dragon (KA), covering more than 90 destinations
  • Design menus for CX and KA lounges in Hong Kong and overseas destinations
  • Drive F&B innovation through cooperating with the chefs of Cathay Pacific Catering Services (CPCS) and external culinary experts, incorporating international F&B trends and the application of advanced food technologies to enhance the overall catering proposition
  • Manage the worldwide catering operation costs for both CX and KA
  • Drive the portfolio of culinary-related projects to enhance the overall F&B proposition for both carriers
  • Be responsible for overall F&B delivery standards
  • Ensure that worldwide caterers deliver inflight catering services according to the specified standards
  • Apply the latest food science and technologies to enhance product quality, improve production efficiency and generate cost advantages
  • Ensure that the safety and security of all inflight catering services meet all the requirements of CX/KA and conform with international standards
  • Ensure all internal quality assurance requirements are met

Key Responsibilities:

  • Closely work with our Customer Experience team (F&B and Service Design) to facilitate fast decision making and speed up the time to market of new products and services than can enhance our overall F&B proposition
  • Collaborate with procurement teams to achieve cost-effective F&B services and ensure that new products or services are delivered in a timely manner
  • Cooperate with CPCS Production to ensure that new culinary propositions are feasible and can be produced in a cost-effective manner
  • Manage F&B services, equipment, logistics and operational delivery to meet the defined F&B proposition and conform to quality and safety standards/regulations
  • Be accountable for caterers and the selection of appointed suppliers
  • Be accountable for performance management through trend monitoring and the implementation of required actions relating to:
    - Passenger satisfaction across all inflight catering services and meeting delivery standards
    - Meeting cost against target on all spend related to catering services
    - Caterer and supplier performance
    - Safety and security standards in relation to catering services activities and equipment
    - The internal quality assurance programme for catering services
  • Ensure that appropriate internal and external communications system, networks and procedures are in place and followed, ensuring that relevant information is communicated to concerned parties in ways that guarantee the best operational safety and qualitative efficiency
  • Ensure continuous improvement and greater efficiency through IT, change management and market research means
  • Understand your role in the Crisis Management Plan and full completion of responsibilities when required
  • Participate in crisis management drills, designed to ensure awareness and readiness, as required

Requirements:

  • At least 10 years’ relevant work experience in that airline industry (catering discipline) or a food production-related industry
  • Work experience in an inflight caterer environment is highly desired/advantageous
  • Education background in Hotel Management
  • Formal culinary qualification from a recognized hospitality institution 
  • Well versed in inflight catering-related requirements or ordinances
  • Good negotiation skills and catering-related market knowledge
  • Sound budgeting and basic financial skills
  • People management skills
  • Good analytical skills
  • Robust knowledge of food and beverage products and application
  • Good communication and interpersonal skills with excellent command of written and spoken English
  • Computer literacy e.g. MS Excel, PowerPoint, Word
